- 4 chicken breasts
- 2 tablespoons olive oil
- 2 tablespoons chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 avocados, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, diced
- 1 lime, juiced
- 2 cups cooked rice
- 3 cloves garlic, minced
- 2 tablespoons butter
Instructions
- Marinate the chicken breasts with olive oil, chili powder, cumin, paprika, salt, and pepper for at least 30 minutes.
- Preheat the grill to medium-high heat.
- Grill the chicken for 6-7 minutes on each side or until fully cooked.
- In a bowl, combine diced avocados, cherry tomatoes, red onion, and lime juice to make the salad.
- In a pan, melt butter and sauté minced garlic until fragrant, then add cooked rice and stir well.
- Serve the grilled chicken with avocado salad and garlic rice on the side.
Notes
- Adjust the spice level by adding more or less chili powder.
- For a vegetarian option, substitute chicken with grilled tofu.
